grilled peach salad

This salad is perfect to enjoy in the summer months, when stone fruit is in season. The sweetness of the grilled peaches takes this salad to the next level. If you want to impress your friends at a dinner party, this is the perfect dish to make!

Add a source of protein (e.g. grilled chicken or tofu) and wholegrains (e.g. brown rice or quinoa) to turn this into a hearty, satisfying lunch or dinner.

What you need:

3 ripe peaches, halved, stones removed

150g baby spinach & rocket leaf mix

1/4 red onion, thinly sliced

1/2 ripe avocado, diced

50g feta

40g walnuts, chopped

For the dressing:

2 tbs olive oil

2 tbs balsamic vinegar

2 tsp honey

pinch of salt

pinch of black pepper

How to make:

Preheat the grill to medium high

Place the walnuts on a tray, and dry roast them for 2-3 minutes until golden brown. Set them aside

Cut the peaches into 6 segments each, and lay the on a baking tray lined with baking paper

Drizzle the segments with olive oil and grill them for 2-4 minutes on each side

Place all of the dressing ingredients into a small bowl and stir them together

To assemble the salad, place the leaf mix in a bowl

Top with red onion, avocado and walnuts

Arrange the grilled peach segments on top, and sprinkle with the crumbled feta

Drizzle the dressing overtop right before serving
